Hi. I’m Nicole. I’m a born and raised restaurant girl, New Mexico living but always dreaming of a beach town. I’m a health nut, workout guru, entrepreneur, and the most dog crazed person you’ll ever meet. By day I run three restaurants, all 13 bar locations at EXPO NM, my liquor brand Nikle Co., and a side of real estate when I have time. By night- I’m dreaming up a new restaurant concept, events, cocktails, or menu item all while playing with my four dogs. I feel like I’ve never worked a day in my life because I truly love what I do.
Q: Please tell us a little bit about your family.
I have a very small Greek family- my dad is my rock and hero and just retired at 90 years old after having 34+ restaurants in his life time.
Q: Please tell us about your current, past, or future career. What do you love most about what you do?
My days are always different- some days are hectic and crazy, and some are more laid back. The best part about my job is that I’m never stuck behind a desk/computer. I am always moving around, seeing people, talking to people, etc. The worst part- I don’t have anyone to call into if I’m sick or need the day off. No one can cover me for the day.
Q: Who inspires you to be better?
Myself and the current state of the world. In a time when everyone is so divided and quick to judge- I try to put all of that aside and see people for who they truly are. The last two years have been so hard on people and I think we’re all just trying to get back to our true selves pre-pandemic.
Q: How long have you lived or worked in our community?
My whole life. I’ve been working professionally since before I graduated college in 2010.
Q: Who is the most interesting person you’ve met here in our community?
Sam Donaldson- retired ABC New anchor who happens to be my best friend. After being in TV for 42 years he has endless stories.
Q: What advice would you give to people?
You can either CB -cut back or MMM -make more money. Also- be kind, always. You never know what someone might be going through.
Q: What is something on your bucket list?
A cooking class in Italy.
Q: (Even for friends or family), what is something interesting that most people don’t know about you?
I’m a homebody-when my career allows it.
